Chef De Cuisine
The Woodlands® Resort’s waterfront Back Table Kitchen & Bar has appointed culinary veteran Mark Deplasco to the role of chef de cuisine. Chef Mark Deplasco joins Back Table Kitchen & Bar as Chef de Cuisine, bringing Marine-forged discipline, leadership, and a passion for fresh, seasonal cuisine. Trained in the Northeast and a graduate of the San Diego Culinary Institute, Deplasco led a successful farm-to-table kitchen in San Diego before spending five years at the Hyatt Regency Houston as Chef de Cuisine and Banquet Chef, overseeing large-scale operations and elevated dining. At Back Table, he channels an ingredient-driven approach—spotlighting local, seasonal products and refined, comforting flavors—while shaping menus that balance creativity with the welcoming spirit of The Woodlands.

Back Table Kitchen & Bar incorporates classic steakhouse techniques with Houston culture to create signature dishes such as Smoked Lamb Shank with Birria Broth, as well as a traditional rack of House Mesquite Smoked Baby Back Ribs. Classics include a 12 oz. Dry Aged Picanha Steak and Center Cut Filet Mignon.
